Rich Flavors of Sri Lankan Black Pork Curry

Ingredients:

  • Pork - 1kg (Shoulder / Leg)
  • Roasted Curry Powder - 02 tsp
  • Green/Red Chilies - 01
  • Turmeric Powder - 1/2 tsp
  • Roasted Chili Powder - 02 tsp
  • Salt as per taste
  • Cinnamon - 01 stick
  • Ginger - 01" piece
  • Lemon Grass - 01" piece
  • Curry Leaves - 02 springs
  • Chopped Big Onion - 01
  • Garlic - 05-06 cloves
  • Vinegar - 01 tsp
  • Clove - 02
  • Cardamom - 02
  • Pepper Powder as per taste
  • Oil - 02 tbsp
  • Water - 1/2 cup

How to cook:

  • In a bowl, combine the pork pieces with roasted chili powder, salt, roasted curry powder, turmeric powder, and pepper powder. Mix well, ensuring the pork is evenly coated with the spices. Cover and let it marinate for at least 30 minutes, or longer for a more intense flavor.
  • Heat oil in a large pan or pot over medium heat. Add the chopped onions and sauté for about 2 minutes, until softened.
  • Add curry leaves, cardamom pods, cloves, lemongrass, cinnamon, ginger, and garlic to the pan. Sauté for 2-3 minutes more, stirring constantly, until fragrant. Be careful not to burn the spices.
  • Stir in the chopped green chilies and vinegar (or tamarind paste). The vinegar helps to tenderize the meat during cooking.
  • Add the marinated pork to the pan and stir well to coat it with the spice mixture. Pour in the water, bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the pork is tender and cooked through. Check the pork occasionally and add more water if needed to prevent the curry from drying out.
