Caramelized Peanut Toffee is a surprisingly easy recipe that you can make for your teatime.
Ingredients:
Roasted Peanuts – 250g
Sugar – 275g
Hot Water – ½ cup
Salt as per taste
How to cook:
Put some sugar into your saucepan, heat it under medium heat until sugar turns into golden brown. Don’t heat sugar too much, then you’ll end up with a bitter taste sugar caramel.
When you are happy with the color of your sugar caramel add remaining sugar and dissolve with the mixture.
When sugar dissolves completely add salt as per your taste and heat the mixture under medium heat.
When sugar comes to the string consistency add peanuts and mix thoroughly until all peanuts coated with the sugar caramel.
Pour the peanut mixture onto a buttered baking tray and quickly spread into ½ inch thick using an oiled metal spatula.
Before the mixture gets harden mark the lines, so that you can easily cut them into pieces later.
When the toffee sets completely cut it into your desired pieces.
You can keep this more than two weeks when stored in an air-tight container.
