Chocolate Beet Cake

Ingredients:Cake Batter

  • Beets – 60g
  • Unsalted Butter – 115g
  • Caster Sugar – 300g
  • Eggs – 02
  • Vanilla – 01 tbsp
  • All-purpose Flour – 300g
  • Baking Soda – 01 tbsp
  • Salt – 01 tsp
  • Cocoa Powder – 02 tbsp

Ingredients:Frosting

  • Cream Cheese – 50g
  • Butter – 20g
  • Icing Sugar – 100g

How to cook:

  • Cut beets into cubes or slices and steam until a fork goes in easily.
  • Put steamed beet into a food processor and make the beet puree.
  • In a separate large bowl, beat butter and sugar until soft and creamy.
  • Gradually add eggs and then add vanilla.
  • Add beet puree into this and thoroughly mix until well combined.
  • Sift flour, cocoa powder, salt, and baking soda gradually into the beet mixture.
  • Transfer the batter into 33x23x4.5cm baking tray and bake the cake around 20-25 mins under 180C in a pre-heated oven. After baking let the cake cool.
  • To make the frosting, beat cream cheese, butter and icing sugar until soft and creamy.
  • Decorate the cake as the way you want with this frosting. You can refrigerate the cake until the frosting is set before cutting it into pieces.
