Egg Fried Rice

Egg fried rice is a quick and delicious dish made with fluffy rice, scrambled eggs, and a blend of simple seasonings. It’s often enhanced with vegetables and soy sauce, making it a perfect meal or side dish. This flavorful recipe is both easy to prepare and endlessly customizable.

Ingredients:

  • Cooked rice – 850g
  • Large eggs – 04
  • Chopped big onion – ½
  • Chopped carrot – 01
  • Chopped leeks leaves – 02
  • Oil – 04 tbsp
  • Salt and pepper as per taste
  • Chili pieces – 01 tsp
  • Garlic cloves – 04 – 05
  • Curry leaves
  • Chicken / Sausages (Optional)

How to cook:

  • Separate egg whites and yolks.
  • Beat egg yolks a bit and mix it with cooked rice.
  • Heat 02 tbsp of oil in a pan and add chopped garlic into it.
  • Once garlic is fried a bit and chicken or sausages. Adding chicken or sausages is optional.
  • Add curry leaves, salt, pepper, and chili pieces.
  • Then add chopped carrots and onions and sauté for few minutes. Once the mixture is ready transfer it to another bowl.
  • Heat another 02 tbsp of oil in the same pan and add rice mixed with egg yolks into it. Cook few minutes under low heat while stirring continuously.
  • Add egg whites into rice and give it a good mix.
  • Once eggs are well cooked add prepared vegetable mixture and chopped leeks.
