French Chocolate Macarons

Enjoy the most delicate and delicious homemade French chocolate macarons. Out of below ingredients you can make around 25 macarons.

Ingredients:Macaron Batter

  • Icing Sugar – 125g
  • Powdered Almonds – 50g
  • Cocoa Powder – 25g
  • Egg Whites – 65g
  • Pinch of Salt
  • Granulated Sugar – 75g

Ingredients:Chocolate Ganache Filling

  • Whipping Cream – 120g
  • Finely Chopped Chocolate – 120g

How to cook:

  • Sieve icing sugar powdered almond and cocoa powder together. If you feel like your almond is not powdered enough grind all these ingredients together few minutes before sieving.
  • After that add a pinch of salt into egg whites and beat until they become foamy.
  • Thereafter, gradually add sugar and beat until peaks foam.
  • When egg whites are ready gradually add prepared dry ingredients into this.
  • Put the mixture into a piping bag with ½ inch plain tip. This way it is very easy to make macaron shells.
  • Pipe the batter into 1 inch size circles. Make sure you keep 1 inch space apart.
  • Then tap the baking tray few times to remove air bubbles if there’s any. Allow this to sit for 20-30 mins until a skin forms.
  • After that we can bake this around 10-15 mins under 200C in a pre-heated oven.
  • When macaron shells are completely cool down remove them from the baking sheet.
  • To make the chocolate ganache filling, melt chocolate and whipping cream together. This chocolate ganache needs to be completely cool down before using.
  • After that, fill macaron shells with chocolate ganache and sandwich them together. Select similar sized shells to sandwich.
  • Let them stand at least one day before serving to blend the flavors.
