Sri Lankan Pan Cakes
Sri Lankan pan cakes with Pani Pol is a great tea time partner.
Ingredients-For the Batter:
- All-purpose Flour – 200g
- Coconut milk – 1 ½ cup
- Turmeric powder – 1/4 tsp
- Eggs – 01
- Salt as per taste
Ingredients-For Pani Pol:
- Scraped coconut – 100g
- Sugar – 100g
- Ground cardamom
- Salt as per taste
Method:
- To make pani pol put some sugar into a pan and let it melt.
- When it is melted pour ¼ cup of hot water and mix well.
- Then add salt and cardamom.
- Add remaining sugar and melt under medium heat.
- When this mixture starts bubbling add scraped coconut and mix thoroughly.
- Cook few minutes until excess water evaporates.
- To make pan cake batter, mix coconut milk, salt, egg and turmeric powder.
- Then add flour and mix well.
- This batter should not be too thick or too watery.
- Get a non-stick pan, pour small amount from the batter & make it like a thin circle by using a spoon.
- Once one side is cooked enough turn this to the other side.
- Since, this pan cake is not too much thick we can make one pan cake less than one minute.
- After making all pan cakes keep pani pol in the middle of the pan cake and roll it.
- Serve hot with a cup of tea.
