Rock Cake / Rock Bun

Rock cake or rock bun got its name because of the rough surface it has. Rock cake is originated in the United Kingdom and it’s an important recipe to save time and ingredients. This recipe is a delicious teatime snack and if you have kids you can make these rock buns for their school lunch box.

Ingredients:For 9 rock cakes

  • All-purpose Flour – 200g
  • Sugar – 60g
  • Salted Butter – 100g
  • Eggs – 01
  • Raisins – 50g
  • Baking Powder – 01 tsp
  • Vanilla – 01 tsp
  • Fresh Milk – 02 tbsp
  • How to cook:

  • Mix flour with baking powder, sieve it, and put into a bowl.
  • Add sugar and vanilla into this.
  • Add butter and mix butter with flour by using your fingertips. Mix it until it becomes like breadcrumbs.
  • Now add raisins into this.
  • Then beat the egg and add it to flour mixture.
  • Finally add fresh milk.
  • It doesn’t need to knead the dough a lot. Just need to mix until all ingredients are well combined. This mixture should be a sticky one.
  • Get golf ball sized spoons of the mixture and place them on the baking tray. Don’t take the mixture into your hand and roll them into balls.
  • Bake these rock cakes around 20-25 mins under 190C in a pre-heated oven.
